Paleo Pumpkin Pie Recipe - Gluten-Free, Dairy-Free, Nut-Free and Vegetarian

If your childhood was like mine, you regularly consumed the pumpkin pie from Costco.  Unfortunately, this pie (and most pies you buy from the grocery store) contains sugar, corn syrup, canola oil, refined flour, and mono & diglycerides.  The Holiday season can be full of STRESS and SUGAR. This recipe is a tool for reducing your sugar intake (i.e. stress on the immune system and gut) during the Holidays.

As you may know, bad oils, gluten, and artificial sweeteners destroy the walls of your gut.  In turn, this depletes your energy, causes your skin to break out, and causes stomach pain.  Making this recipe instead of a conventional pumpkin pie recipe will help reduce the stress that the immune system often experiences this time of year. ⁠  

I’ve searched far and wide for the perfect nut-free paleo crust that also doesn’t have too much starch. This uses my favorite coconut flour which is light and nutrient-dense.

Here is a pumpkin pie recipe that is Paleo and GAPS friendly.  Enjoy this simple recipe that your family/friends will enjoy and that won’t wreak havoc on your body:

Paleo Pumpkin Pie Recipe (Gluten-Free, Dairy-Free, Nut-Free and Vegetarian)!

Servings: 6


Crust Ingredients:

  • 3 eggs
  • 1 cup coconut flour
  • 1 tablespoon raw honey
  • ½ cup coconut oil melted
  • water until desired consistency

Crust Instructions:

  1. Preheat oven to 350 and lightly grease pan
  2. Add all the ingredients into mixing bowl and mix
  3. If crust looks too dry add water until desired texture
  4. Bake for 10 minutes and start filling

Filling Ingredients:

  • 2 cups of pureed pumpkin (cook pie pumpkin or hubbard and then puree it with food processor or immersion blender) or canned pumpkin
  • 1 cup full fat coconut milk (I use this [coconut milk][1])
  • 3 eggs
  • 2 ½ teaspoons vanilla extract
  • 1 teaspoon sea salt
  • 2 tablespoons total of pumpkin pie spices (i.e. cinnamon, nutmeg, cloves, allspice and ginger), get creative with this part ;)
  • ½ cup maple syrup or raw unfiltered honey

Instructions:

  1. Mix ingredients and pour into pie crust (You might want to consider this wisk)
  2. Bake at 350 degrees F for 35 minutes
  3. Let cool and enjoy!
