Paleo - Dairy Free and Gluten Free

Servings: 8


Ingredients:

  • 2 pounds organic carrots
  • 1 onion
  • 2 cups (1 can) coconut milk
  • 2 tsp curry powder
  • 1 tsp cinnamon
  • 2 quarts of chicken meat stock or bone broth⁠

Instructions:

  1. Chop all vegetables into uniform pieces
  2. Start to bring to boil the stock in a medium-large pot
  3. Put all the vegetables into the stock that is heating up
  4. Once it starts to boil, add the spices and put a lid on. You can bring down the heat to medium and let cook for 20-30 minutes
  5. Once vegetables are soft, add in the coconut milk and stir.
  6. Blend the soup with an immersion blender or transfer to a vitamix.
  7. Serve with cinnamon and paprika or fennel seeds
