Zucchini Bread- GF, Grain Free, DF, Egg Free Option, Nut Free

I love zucchini bread in the summer. It satisfies my sweet tooth while also providing me with nutrient density and some good fiber!

Why Nut Free?

Nuts and seeds contain phytic acid which is an amino acid (protein) that can be difficult to digest and can contribute to leaky gut, food intolerances, and skin issues. We can “pre-digest” phytic acid by soaking and dehydrating nuts and seeds to help break down the proteins. But, many people can still have a difficult time digesting nuts. I enjoy finding recipes that use coconut flour and vegetables. This one is a winner!

Ingredients:

  • 3/4 cup coconut flour⁠
  • 6 eggs OR for Egg Free version use 10 chia seed "eggs,"(this is about 1/2 cup of chia seeds with 1 1/2 cups of water combined and let sit)
  • 1/2 cup raw unfiltered honey⁠
  • 1/4 cup melted coconut oil⁠
  • 1 teaspoon vanilla extract⁠
  • 1 teaspoon ground cinnamon⁠
  • 1/2 teaspoon ground nutmeg⁠
  • 1 teaspoon baking soda⁠
  • 1 1/2 cups shredded zucchini, tightly packed⁠

Instructions:

  1. For egg free version, soak the chia seeds in water so they become gelatinous⁠
  2. Preheat oven to 350
  3. Put all dry ingredients in large mixing bowl⁠
  4. Grate a medium sized zucchini⁠
  5. Add eggs, honey, and coconut oil⁠
  6. Mix and after well combined stir in the zucchini ⁠
  7. Bake for 45 minutes
