Honey Rhubarb Jam-Refined Sugar Free (GAPS, AIP)

Homemade Honey Rhubarb Jam from a lovely rhubarb plant in our garden space.

Benefits of Rhubarb:

Rhubarb contains fiber, protein, vitamin C, vitamin K, B complex vitamins, calcium, potassium, manganese, magnesium, beta-carotene, lutein, and zeaxanthin. It is high in antioxidants so it's good for inflammation and your immune system.⠀The fiber is beneficial for gut health. Vitamin K is brain and bone protective, so it helps prevent neurodegeneration.⠀The trace minerals in rhubarb support circulation. Beta-carotene is a precursor to vitamin A which supports skin and immune systems.

Servings: 1 pint sized jar of jam

Ingredients:

  • 3 cups chopped rhubarb
  • 1 cup honey
  • 2 tbsp Chia seeds (optional)

Instructions:

  1. Chop rhubarb and add to a small pot with 1 cup honey.
  2. Bring to boil and simmer for about 15 minutes or until desired consistancy. It should start to thickend and smooth.
  3. Transfer to jars and mix in chia seeds if desired. Keep in fridge for up to 3 weeks or longer in the freezer.
