Chocolate Chip Cookie for GAPS-Y People- (paleo and gut-friendly)

Delve into the nutrition world and you will find a plethora of Diets for you to choose from. I've not been one to label myself and my own personal recommendation for people is to try to keep an open mind. We all have to recognize that each and every human is bio-individually diverse and not 'One' diet fits all. With that in mind, you will find me refer to specific diets as therapeutic food choices that might work best for certain body compositions, or rather someone exhibiting specific signs or symptoms. This does not mean these diets are for everyone, BUT I find value in them and they can be great to google for recipes!

One thing that I can generalize is how EVERYONE loves a good chocolate chip cookie. As a nutritionist focused on those with severe gut imbalances, I had to create a wholesome chocolate chip cookie. I call it GAPS-Y people friendly because there is a specific diet protocol that I love called GAPS. GAPS stands for Gut and Psychology (and Physiology) Syndrome and is a therapeutic diet developed by an amazing neurologist named Natasha McCampel-McBride. This diet is foundational to target many chronic physiological and psychological disorders. The nutrition protocol generally consists of bone broth, grass-fed organic and free-range meats, eggs, non-starchy vegetables, fermented foods, and if tolerated soaked and sprouted nuts/legumes, and honey. This diet is very similar to the paleo diet and you will find many of my recipes revolving around these two food genres.

I love this cookie recipe because it is quick, full of good fats, protein, and it's satisfying!

Paleo, Dairy-Free option, and Gluten Free

  • makes 10-12 cookies

Ingredients:

  • 2 cups walnuts (preferably soaked and dehydrated)
  • 1/4 cup coconut flour
  • 1/4 cup almond flour
  • 1 tsp of baking soda
  • 1 tsp of cinamon
  • 1 tsp of vanilla
  • 2 eggs
  • 2 tbsp of honey
  • 1/2 cup of ghee (or butter, coconut oil)
  • 1/2 cacao nibs or chocolate chips (preferably sugar-free and dairy-free)

Instructions:

  1. In a food processor, grind walnuts with ghee and honey until walnuts begin to form a nut butter consistency.
  2. Preheat oven at 350 degrees.
  3. Add the eggs, coconut flour, almond flour, baking soda, and spices. Blend until mixture forms a cookie-dough consistency.
  4. Mix in cacao nibs or chocolate chips. Feel free to incorporate other additions to the dough, such as coconut shavings or chopped pecans.
  5. Place dough balls onto greased baking sheet 1 " apart. Bake 10-12 minutes or until golden brown. Makes 10-12 cookies.
