Beet Pancakes

Paleo, Dairy-Free, and Gluten Free

Ingredients:

  • 1-2 medium beets roasted or steamed
  • 1/2 c coconut milk
  • 1/2 c coconut flour
  • 1/4 c casava flour (or nut butter for GAPS version)
  • 1/2 tsp baking pwder
  • 6 eggs

Instructions:

  1. Mix all ingredients in a blender or food processor, making sure the beets are thoroughly blended.
  2. Heat a skillet with some coconut oil on medium-low heat.
  3. Pour out your perfect size pancakes and cook for 3-5 minutes on both sides (these pancakes need low heat to cook all the way through)
  4. Enjoy with your favorite toppings: fresh fruit, yogurt, honey, and coconut are my favorites!
